Mercimekli Köfte (Red Lentil-Bulgur Patties)
Here we have a Turkish vegan recipe from Reyhan Gül
(Makes about 20-25 bite size patties)
* 1 cup red lentil
* 3-4 cups of water
* 1/2 cup fine bulgur
* 1 large onion, finely chopped
* 1/4 cup plus 2 tablespoon of extra virgin olive oil
* 2 tablespoons of tomato and 2 tablespoons of red pepper paste
* 3 green onions, finely chopped
* Half a bunch fresh parsley finely chopped
* Freshly squeezed lemon juice from 1 big lemon (adjust according to your taste)
* 1 teaspoon salt (or more for your taste)
* 1/2 teaspoon black pepper (or to taste)
* 1 teaspoon cumin( or more )
* 1 teaspoon paprika
DIRECTIONS
1. Cook red lentils in water. Once cooked and in thick soup consistency, add uncooked bulgur, stir, close the lid. Turn off the heat.
2. Meanwhile, heat a sauté pan over medium heat. Fry the onion in the olive oil until soft, but not coloured, 8-10 minutes. Stir regularly to ensure it doesn’t catch. Add the tomato paste, red pepper paste and cumin. Fry for a couple of minutes, stirring constantly. Leave to cool.
3. Once bulgur-lentil mixture cools down, add the rest, except lemon juice and 1/4 cup olive oil. Mix everything together with your hands (works better)
4. Add lemon juice and olive oil, form patties.
TO SERVE
* 1 lemon, cut into wedges
* Crispy green salad leaves (e.g. romaine lettuce)
